Start your day the healthy, west coast way with a hearty breakfast bowl that’s as energizing as it is delicious. Vancouvers take on the breakfast bowl ranges from wholesome ingredients like roasted potatoes, eggs, sauteed greens, veggies and home-made sauces to avocados, fruit, yogurts, seeds, nuts and more. You can find these delicious bowls served in cozy cafes all over the city or try your hand at making them at home. There are a lot of variations of the breakfast bowl so have some fun with it, we’ll get you started here. Check out this recipe, which we experimented with until we got what we liked.

This recipe has homemade vegan granola in it, so once that is made it will make the overall time shorter, until you run out of it. You can put your granola in an airtight container for up to 3 weeks, although ours doesn’t usually last that long. We started making our own granola as a healthier option then store bought, as even the “healthy” brands seem to have a lot of sugar and preservatives in them.

Ingredients:

Granola:

  • 2 cups of oats
  • ½ cup of natural walnuts
  • ½ cup of natural almond slivers
  • 1/3 cup of unsweetened shredded coconut
  • 1 scoop of Vegan protein powder
  • 1 teaspoon of cinnamon
  • 1 tablespoon of flax seeds
  • 1 tablespoon of chia seeds
  • ¼ cup of coconut oil (melted)
  • 1/3 cup of maple syrup
  • 1 tablespoon of vanilla

Breakfast bowl:

  • A few kale or spinach leaves
  • 1 avocado
  • ½ cup of coconut water or water
  • Plain Greek yogurt (desired amount)
  • ½ banana or whole small one
  • Handful of strawberries
  • Handful of blackberries
  • Handful of raspberries

Instructions:

  1. For the Granola, preheat oven to 300 degrees F, combine the dry ingredients in a mixing bowl, melt the coconut oil, add the maple syrup and vanilla, then pour over dry ingredients and stir until moist. Spread out evenly on a greased cookie sheet and bake for 25 to 30 mins. Let cool in the pan for a least 15mins or until cool to the touch, then break up in pieces and place in an airtight container for up to 3 weeks.

  1. Place the kale or spinach, avocado and coconut or plain water in a blender and blend until smooth.

  1. Arrange the breakfast bowl:

On one side of the bottom of bowl place the avocado mixture, on the other side the yogurt, then arrange the different fruit choices on top, (as fancy as you’d like). Lastly, finish it off with the crunchy and delicious homemade granola and enjoy!
