This Hearty vegetable soup is great all year-round, but especially comforting in the colder months. It combines staples like white beans, swiss chard, carrots, celery, onion, rosemary and stale bread, torn into pieces and blended with the other ingredients, it’s delicious and healthy. Serving Size: 4
Ingredients:
- 3-4 medium Carrots
- 3 Celery stalks
- 4 cloves of Garlic
- A handful of Swiss Chard leaves (can use spinach or Kale)
- 1 medium Onion
- 1 sprig of fresh Rosemary
- 1 (15oz) can of white beans like Kidney/Cannellini beans (rinsed & drained)
- 1 (28oz) can of diced or crushed Tomatoes
- 4 Cups of Vegetable Stock
- Salt to taste
- 1-2 teaspoon of Italian spice
- 2-3 tablespoons of extra virgin Olive Oil (plus some to drizzle on the bread)
- 4 cups of day-old Italian Bread (about 4-5 slices)
- Shredded Parmesan Cheese and a handful of fresh Basil leaves for topping
Instructions:
- Heat the oil in a large stock pot over medium heat, sauté the onions, celery and carrots for about 6-8 minutes, until they are soft. Season with a little salt while cooking.
- Add the garlic, rosemary and Italian spice, cook for about another minute.
- Next, add the beans, veggie stock and tomatoes, bring to a boil, then lower the heat to medium and simmer for about 15 mins with the lid on, while simmering add the Swiss Chard to let it wilt.
- While the soup is simmering, tear your bread into chunks, drizzle with a little olive oil and toast on broil in your oven until golden, (check after a few minutes), then set aside and let cool.
- Next add the bread into the soup and stir until the soup thickens, if it looks too thick you can add a little more stock or water as needed.
- For toppings add a sprinkle of parmesan cheese and some fresh basil leaves, (omit cheese if making vegan). Enjoy!
