Kaiserschmarrn is a beloved alpine comfort dish you’ll see on menus throughout the Dolomites, especially in cozy mountain huts. This fluffy, shredded pancake is lightly caramelized, dusted with powdered sugar, and served with either a fruit compote, jam, or apple sauce, and best enjoyed after a long hike, Kaiserschmarrn feels like a well-earned reward – simple, rustic, and deeply tied to the region’s mountain culture.
Prep Time: 10-15 mins.
Cook Time: approx. 15 mins.
Total Time: 25 to 30 mins
Serves: 4
Ingredients:
- 4 eggs, room temperature, separated.
- 1 cup of all-purpose flour
- 2 tbsp of Granulated sugar
- 1 pinch of salt
- 1 cup of whole milk (3%)
- ¼ cup of raisins (soaked in rum or nuts, we like pecans).
- 3 tbsp unsalted butter for frying
Instructions:
- Combine the flour, milk, egg yolks, sugar, and salt in a mixing bowl and mix until smooth.
- In another mixing bowl beat the egg whites until peaks form, then fold into the batter and combine, but do not over mix.
- Melt the butter in a skillet over medium heat, until bubbly.
- Pour the batter in the pan and let it cook for approx. 3 mins, should be golden brown, on that side, then flip over, might need 2 spatulas or some help!
- Cook the second side for approx. 3-5mins. Then take 2 forks and shred the pancakes.
- Preheat the oven to 350 degrees F. Sprinkle the raisins or nuts on top now.
- Then place the oven safe skillet in the oven for 5 mins, you can add a bit more butter on top.
- Take it out, dust with powdered sugar and serve with apple sauce, jam, compote, whipped cream, or maple syrup.
- Enjoy!
If you have leftovers, you can store them in the fridge for up to 3 days or they freeze well. The Kaiserschmarrn is perfect for dessert or breakfast!
