When you visit the Collingwood area, you’re bound to notice two things, the stunning rows of apple orchards flanking the Blue Mountains, and the rich heritage of the local distilling by the bay. This recipe brings the best of the region straight to your table. It combines the crisp, tart Ontario apples with deep, organic Canadian maple syrup, and a splash of Collingwood Canadian Whisky. What makes this whisky special is that it is uniquely finished with toasted Maplewood staves, creating a creamy, vanilla-caramel flavour that elevates a basic apple crisp into a true gourmet travel experience.

Bake time: 45 mins

Total time: 65 mins

Serves: 6

 

Ingredients:

 

For the apple filling-

  • 6 large baking apples cored, peeled, and sliced (Granny Smith, Cortland or Honey Crisp work well)
  • 1/3 cup pure Canadian maple syrup
  • 3 tbsp Collingwood Canadian Whisky ( or similar)
  • 1 tbsp of fresh lemon juice
  • 1 tbsp of cornstarch
  • 1 tsp of cinnamon
  • 1/4 tsp of nutmeg

 

For the toasted crumble topping-

  • 1 cup of old-fashioned rolled oats
  • 1/2 cup of all-purpose flour
  • 1/2 cup of packed brown sugar
  • 1/2 cup of unsalted butter
  • 1/2 cup of chopped walnuts
  • a pinch of sea salt

 

Instructions:

 

  1. Preheat your oven to 350 degrees F and lightly grease an 9×9 baking dish with a little butter
  2. In a large mixing bowl, combine everything in the apple filling section and mix until it’s all coated. Pour into the baking dish and smooth out.
  3. In a separate bowl, mix the topping ingredients add the cold butter last and either use a pastry cutter or the back of a wooden spoon and work the butter into the flour mixture until it’s crumbly.
  4. Pour the crumble topping on top of the apple mixture, making sure to cover it completely to trap in the steam. Place in the pre-heated oven for 40-45mins, until it’s golden-brown and the juices are bubbling around the edges.
  5. Once it’s done, let it sit for about 10 mins before serving. Serve on it’s own or with a scoop of vanilla ice cream, while it’s still warm. Enjoy!
