This delicious peach flavoured cocktail is refreshing and perfect all year round. It was originally made in 1948 by Giuseppe Cipriani, a bartender and owner of Harry’s Bar, who was commissioned to create a drink in honour of a famous Venetian painter Giovanni Bellini. It’s quick and easy to make and can be made regular or frozen. Serving Size: approx. 4
Ingredients:
- 5 medium sized peaches (if off season use approx. 2-3 cups of frozen peaches, thawed)
- 1 bottle of Prosecco
- Ice if making frozen
Instructions:
- Wash peaches, cut into slices, and remove pits.
- Place peaches in a blender and pulse into a puree, (if using frozen peaches you might need to add a little water or it may be too thick of a consistency).
- Strain peach puree through a sieve to remove any bits of skin.
- Fill a ¼ of a flute glass with the peach puree, then slowly add with chilled Prosecco, letting the bubbles disappear before topping it up.
- Stir to combine, add ice and garnish with a slice of fresh peach if desired.
- For a Frozen option, place the ingredients in a blender with ice and blend until frothy.
- Enjoy!
To make ahead, puree the peaches, strain, place in a covered container, and store in the fridge for up to 3 days, stir before using.
