This delicious traditional Tomato and Onion soup is served with a poached egg on top and fresh bread or croutons. We enjoyed this soup several times when we visited the beautiful Island of Madeira. We love to try as many new local foods as we can when we travel, one of our many favourite things to do! So this one we had to share, hope you enjoy it as much as we do. Ingredients:
- 2 medium onions (chopped)
- 6 tomatoes (2lbs) (skinned and diced)
- 4 garlic cloves (chopped)
- 3 cups of chicken or veggie stock
- 1/4 cup of olive oil
- 1 cup of tomato paste
- 3 tbsp of fresh oregano or parsley
- ¼ tsp each of salt and pepper
- 5 bay leaves
- 1 poached egg per serving
- Crusty bread slices or croutons (I made smoky paprika croutons)
Smoky Paprika Croutons:
- 3 cups of crusty bread, chopped into cubes
- 2 tbsp of melted butter
- 1 tsp smoked paprika
Instructions:
- Heat the olive oil in a large pot and sauté the onion for 4-5 mins over medium heat until slightly softened.
- Stir in the garlic, half of the fresh oregano or parsley and salt, cook for 5 mins.
- Add the tomatoes, bay leaves, tomato paste and broth, simmer for approx. 25-30 mins, then discard the bay leaves.
- Add the remaining herbs and pepper.
- Depending on the consistency you prefer your soup; you can blend all or a portion of it or leave it the way it is.
- Serve the soup with a poached egg on top and fresh bread or these smoky paprika croutons and enjoy!!
For the Smoky Paprika Croutons:
1. Preheat oven to 400 degrees, then mix the melted butter with the paprika.
2. Combine with the cubed bread and mix to coat.
3. Spread onto a baking sheet in an even layer, bake for 8-10 mins, enjoy!
